Start from a ratio
Weigh the dose in and the shot out. A 1:2 ratio — 18 g in, 36 g out — is a starting point, not a target. Everything else is adjusted against it.
Change one thing
Grind finer to slow the shot, coarser to speed it up. Do not also change the dose in the same attempt, or you will not know which change did what.

Write it down
Dose, yield, time, grind setting. Three mornings of notes will tell you more than any chart, because it is your beans, your water and your machine.
When to stop
When it tastes good twice in a row. Precision past that point is a hobby, which is fine — just know that is what you are doing.
